We’re well into the second week of May and now that all the Cinco de Mayo shenenigans are done, it’s time to focus on one of my favorite holidays… Mother’s Day!
And for good reason.
It’s also been amazingly beautiful outside the past few weeks and finally getting warmer.
It was about 70° out the other day and all I did was sit on the back porch soaking up the sun while the kiddos ran amuck in the backyard.
It’s not quite warm enough to blow and fill up the pool but I’ll settle for basking in the sun, reading a good book, and drinking favorite new cocktails.
Plus, Mother’s Day is coming up this weekend and maybe I’ll finally get to sleep in?
If not, I definitely know what I’ll be enjoying during the day because the forecast is set for 75°, with sunny skies, and this watermelon kiwi prosecco punch.
I teamed up with VOVETI to bring you this delicious, summertime inspired cocktail because when I saw watermelon and kiwis in the store I just knew that VOVETI prosecco would be the prefect vessel.
It makes a perfect mimosa base and sweet cocktail because VOVETI is a dry brut but with tempered acidity and a fresh, graceful profile.
Since VOVETI features flavors of pear, green apple, and melon I just knew that the watermelon flavor would only enhance the flavor of the prosecco.
Plus, VOVETI has persistent bubbles which is something that I love because I hate when my sparkling wine goes flat before I’m done drinking it.
So I’ll be celebrating this weekend with the hubby and kiddos and praying that the weather doesn’t get any worse or changes.
I’ve already got another watermelon in the fridge to cut and make more of this mimosa.
Because regular old mimosas just won’t do anymore. Watermelon kiwi prosecco punch is where it’s at.
Watermelon Kiwi Prosecco Punch
- 6 cups watermelon cubed
- 4 kiwi peeled
- 1/2 cup watermelon vodka
- 1 (750ml) bottle prosecco
- In a blender, add watermelon cubes and kiwi. Blend on hig for 30 seconds to 1 minute.
- Pour mixture through fine mess strainer into large jug to remove seeds and pulp. Add vodka and stir.
- Pour watermelon mixture 1/2 way into glass and top with prosecco. Garnish with mint and extra kiwi slices, if desired and serve.
