Guessing by the current number of pancake posts I have on this here blog, you can probably tell that I am a huge lover of pancakes.
They are just so easy to make and a great way to start out the weekend… with a big plate of hot pancakes. It also one of my favorite things to do on the weekends with my girls.
Now that my littlest has some teeth, she can enjoy the pancake goodness that I’ve been cooking up lately.
Especially when said pancakes are made of chocolate and smothered in real maple syrup. Another bonus of living in Michigan… real maple syrup sold on every street corner. Seriously. Along with all the amazing farmer’s markets and all the other fresh fruits and veggies that they have.
I really do love living here in Michigan, even though in some of my posts it doesn’t seem like I do… it’s just that gosh darn snow that I hate. Maybe that’s just a by-product of me growing up in Florida.
Who knows? This Florida girl is warm blooded and I am just not built for these winters.
We won’t be here forever though and I know that when we do move again I’ll be complaining that I miss all the local wineries, breweries, and cute little things about this town.
I am definitely a little spoiled living here with all the local breweries and wineries and farmer’s markets during the spring and summer months.
That’s the problem though. In the winter everything literally shuts down. Most of the restaurants close for lunch and are only open for dinner and there’s nothing to do outside. So we’re stuck in the house. Lame.
Oh well… Moving along.
These pancakes are based from French Silk Pie, which is usually made with raw eggs. But don’t worry, these don’t have raw eggs in them. They do however, taste just like French silk pie. Yummy!
Chocolate French Silk Pancakes
Ingredients
- 2 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 2 cups milk
- 2 tsp vanilla extract
Instructions
- Preheat electric griddle to medium and spray with nonstick cooking spray.
- In a large bowl add flour, sugar, cocoa powder, baking powder, and salt and whisk to combine. Add eggs, milk, and vanilla and stir to incorporate.
- Drop batter by 1/4 cupful onto hot griddle and cook for 1-2 minutes per side, or until done.
- Serve immediately with your favorite topping.
