Happy New Year Eve, friends! I’m coming at ya today with my very last cocktail recipe of 2020 and it’s for sure delicious!
Grapefruits are one of my favorite citruses, behind blood oranges, so it’s super fun to experiment with them in different drink combinations.
I love me a good paloma and eating grapefruit alone just as equally.
I made a rosemary simple sugar recently to experiment with and I love the subtle flavor it adds to the cocktail. So today I made a grapefruit rosemary gin-mosa.
Made with fresh grapefruit juice, that rosemary simple syrup, and topped off with some prosecco or champagne. Basically your preference on bubbles.
To make the simple syrup, add equal parts sugar and water to a saucepan and stir to combine. Heat over medium heat until the sugar dissolves.
Remove from heat and add about 2-4 rosemary sprigs. Cover the saucepan and let steep for 10-15 minutes.
Once the 15 minutes is up, remove the rosemary sprigs and let the mixture cool completely. Honestly, it should be pretty cool by this point.
Pour it into an airtight container and refrigerate until fully chilled. You can then store it in the fridge for up to a month.
Now, to make this gorgeous drink.
Start with a large wine glass and pour the grapefruit juice, rosemary syrup, and gin over ice and stir to combine. Top with prosecco and garnish with a grapefruit wheel and fresh sprig of rosemary.
Serve and enjoy!

Grapefruit Rosemary Gin-mosa
Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 fresh rosemary
- 2 oz grapefruit juice
- 1/2 oz rosemary syrup
- 1 oz gin
- 4 oz champagne or prosecco
- grapefruit slices
- fresh rosemary
Instructions
- Heat the sugar and water over medium heat until the sugar dissolves. Add the rosemary sprigs and remove from heat. Cover and let steep for 15 minutes.
- Remove the rosemary sprigs and discard. Let mixture cool completely – you can place it in the fridge or freezer for faster cooling time.
- In a large champagne or wine glass add the grapefruit juice, rosemary syrup, gin, and champagne.
- Stir together lightly with a rosemary sprig and garnish with a grapefruit slice.
