On Wednesdays’ we drink pink! Haha… who am I kidding? I don’t even know what day it is.
Were still in the thick of summer, in the middle of a pandemic, and school hasn’t started yet so it’s just a triple whammy and your guess is as good as mine as to what day and time it is.
Thankfully though, we have been getting out a little even if it is just to the grocery store.
Anyway, today I’m bringing you yet another take on a classic margarita. This one is such a beautiful pink color from the fresh raspberries and sweetness from some agave nectar.
I did order some prickly pear syrup from amazon recently and really need to use it to make some margaritas and other cocktails.
Back to the raspberry margarita…
Start by adding 3-4 fresh raspberries to the bottom of a cocktail shaker with the agave syrup. Muddle heavily with the end of a wooden spoon or a drink muddler.
Add the lime juice, tequila, and orange liqueur then fill shaker half-way with ice. Cover and shake vigorously for 30 seconds to incorporate and chill the drink.
Strain into a margarita glass filled with fresh ice and a sugar rim. To make the sugar rim, rim the margarita glass with the wedge of a lime and dip into a shallow dish filled with sugar.
Garnish the cocktail with a skewer full of fresh raspberries and a mint leaf, if desired.
Grab your cocktail and head out to the patio to soak in the sun. I’m all about that patio life lately and usually sit with a drink in hand and my feet in the kiddie pool. Ha!
Raspberry Margarita
Ingredients
- 3 raspberries
- .5 oz agave nectar
- 3/4 oz lime juice
- 1.5 oz blanco tequila
- 1 oz orange liqueur
Instructions
- Add the raspberries and agave nectar to a cocktail shaker. Muddle fully with a drink muddler or the end of a wooden spoon.
- Add lime juice, tequila, and orange liqueur. Fill shaker 1/2 way with ice, cover, and shake for 30 seconds.
- Strain into margarita glass filled with fresh ice. Garnish with raspberry skewer and mint leaves, if desired.
