Ingredients
1lbpork sausage
2Tbspolive oil
3ozdark stout beer
Mashed Potatoes
4largerusset potatoespeeled and diced
4Tbspunsalted butter
½cupmilk
Stout Onion Gravy

1largeyellow onionsliced
2Tbspall-purpose flour
1cupdark stout beer
1cupbeef broth
Instructions
Heat a large skillet over medium-high heat and add olive oil, turning to coat the bottom of the pan; add sausages and stout.
Cover with a lid, crack slightly to allow steam to escape, and cook for 10-12 minutes, turning half-way through.
Remove the lid, keeping the sausages in the pan, and continue to cook, uncovered turning occasionally, for additional 10 minutes until sausages are cooked through and liquid is reduced by about half.
Stout Onion Gravy
While the sausages are cooking, heat a small pot over medium-high heat. Add butter, let melt, then add the sliced onions and season with salt and pepper, to taste.
Cook, stirring frequently until onions are slightly browning and fully wilted. Sprinkle the flour evenly over top and stir to combine.
Deglaze the pan by adding the stout beer and scraping all the brown bits from the bottom. Add the beef broth, stir to combine, and bring to simmer.
Reduce heat to medium and let cook additional 10 minutes, until sauce is thickened and coats the back of a spoon.
Mashed Potatoes
Place a large pot filled with water over high-heat and bring to boil. Add the potato chunks and cook until soft.
Drain the potatoes, add butter, milk and season with salt and pepper to taste. Mash to your preferred consistency.
Serve the mashed potatoes topped with a couple sausages and gravy smothered over top. Garnish with fresh parsley leaves, if desired.
