Super easy shrimp fajitas that are marinated in salsa and chili powder then sautéed with sweet peppers and onions and topped with avocado and cheese.

Ingredients
1lbshrimppeeled and deveined
1/2cupsalsa
1tspchili powder
1Tbspolive oil
8ozmini sweet pepperssliced
1mediumred onionsliced
8smallcorn or flour tortillas
1avocadopeeled and diced
queso frescocrumbled
2limesquartered
Instructions
In a large bowl, toss the shrimp with salsa and chili powder.
In a large skillet, over medium-high heat, add olive oil, peppers and onion. Let cook for 5-6 minutes until onion is slightly translucent and peppers are soft. Transfer to clean plate.
Using the same skillet, add entire contents of bowl with shrimp and salsa. Cook, stirring occasionally, for 3-4 minutes until shrimp are opaque and cooked through.
Reduce heat to medium-low and add pepper/onion mixture back to skillet. Season with salt and pepper and stir to combine.
Remove from heat and serve immediately in tortillas topped with avocado dices, queso fresco cheese, and a squeeze of lime juice.
