Ingredients
Rosemary Syrup
½cupgranulated sugar
½cupwater
3sprigsfresh rosemary
4stripsgrapefruit zest
Cocktail
1 ½ozgrapefruit juice
3ozblanco tequila
½ozlime juice
2ozgrapefruit sodafresca or squirt
½ozrosemary syrup
Instructions
Rosemary Syrup
In a small saucepan combine the sugar, water, rosemary sprigs, and grapefruit zest; stir. Bring to simmer over medium heat, stirring occasionally, until the sugar is dissolved.
Remove from heat letting the syrup cool; at least an hour. Strain into an air-tight container.
Cocktail
Add the grapefruit juice, tequila, lime juice, and rosemary syrup in a cocktail shaker. Fill about 1/2 way with ice, cover and shake for 30 seconds.
Strain into a rocks glass filled with fresh ice. Top with 2 oz grapefruit seltzer, stir gently, garnish with rosemary sprig and grapefruit wheel, if desired.
