Ingredients

watermelon
cubed

white rum

oz
lime juice

jalapeño simple syrup

granulated sugar

cup
water

medium
jalapeño
sliced
Instructions
Jalapeño Simple Syrup
In a small saucepan, over medium-heat, add the sugar, water, and sliced jalapeño; stir to combine.
Bring to simmer, stirring occasionally, and cook until sugar just melts.
Once the sugar is melted, turn off the heat and let jalapeño slices steep in the liquid for 10 minutes.
Strain into an air-tight container and place in refrigerator to cool.
Cocktail
In a blender add the watermelon cubes, lime juice, rum, and jalapeño simple syrup. Blend for 30 seconds.
Dip the rim of 2 rocks glasses into a small amount of water and then into either sugar or salt, your choice.
Fill the glasses with fresh ice then strain your cocktail mixture over top. Garnish with fresh watermelon and jalapeño slices, if desired.
