Chocolate Chip Coffee Pancakes
Classic pancakes kicked up with some instant espresso and coffee extract then topped with chocolate chips.

Ingredients

all-purpose flour

granulated sugar

tsp
baking powder
1/2
tsp
salt

instant espresso powder
1 1/4
cups
milk
1
large
egg
1
tsp
vanilla extract
1/2
tsp
coffee extract
1/2
cup
mini-chocolate chips

Instructions
Heat electric griddle, according to manufacturer's instructions, to medium heat. Coat with butter for non-stick.
In a large bowl add flour, sugar, baking powder, salt, and instant espresso powder. Whisk to combine.
Add milk, egg, vanilla extract, coffee extract and whisk to combine all ingredients.
Scoop pancake mixture by 1/4 cupfuls onto hot griddle and top with a few chocolate chips.
Cook 2-4 minutes, or until small bubbles start to form on top. Flip and continue cooking until done; about 2-4 minutes.
Repeat with remaining batter.
Serve immediately topped with extra chocolate chips, if desired, and your favorite syrup.
Notes
to keep pancakes from getting soggy while cooling, place on cooling rack while cooking rest of batter.
