Simple stuffed peppers made with seasoned ground beef, black beans, and chipotles in adobo sauce for a little kick!

Ingredients
4largeyellow bell peppers
1lbground beef
2tsptaco seasoning mix
1cupblack beans
1/2cuptaco sauce
1chipotle in adobominced
Avocado Cream
1mediumavocado
2Tbsplime juice
3Tbspsour cream
3Tbspfresh cilantro
Toppings
shredded Mexican cheese

Instructions
Preheat oven to 400° F.
Cut the bell peppers in half lengthwise and remove seeds.
Heat a large skillet over medium high and add the ground beef and taco seasoning mix. Cook until browned; about 5 minutes. Stir in the beans, taco sauce, and chipotle in adobo.
Scoop mixture out, evenly, among the bell peppers. Place on baking sheet or in baking pan and bake at 400° until the bell peppers are tender and the filling is warmed through; about 25 minutes.
Meanwhile, make the avocado cream by adding ingredients to blender or food processor and pulse until smooth and creamy.
Remove peppers from oven and let cool for about 10 minutes before serving. Top with drizzle of avocado cream and some crumbled queso fresco.
