Bringing you, yes another, super simple almost cheater cocktail recipe today. I mean, why not?

Simple cocktail recipes are my jam and perfect for when you feel like a cocktail but don’t want to spend a bunch of time mixing together ingredients.

This is basically an upgraded gin and tonic – made with fresh raspberry syrup for a little sweetness and beautiful pink color.

Raspberry Gin &Amp; Tonic

I was feeling a regular gin and tonic the other day but had some raspberry syrup in the fridge that I needed to start using because it was getting a little old. I hate wasting food so I decided to put some of it in this easy gin and tonic.

To make the raspberry syrup, heat equal parts water and sugar (1 cup each) and 1 cup of fresh or frozen raspberries. While the mixture is heating, mash the raspberries to release their juices and stir into the syrup.

Bring to low simmer and let cook for about 5-7 minutes. Remove from heat and cool completely before transferring to an airtight bottle. You can store the syrup in the fridge for about a month.

Raspberry Gin &Amp; Tonic

To make the raspberry gin and tonic, add the raspberry syrup, gin, and some lime juice to a cocktail shaker. Fill 1/2 way with ice, cover, and shake to combine.

Strain into a highball glass filled with fresh ice then top with your tonic and garnish with a lime wheel.

Alternatively, you can just add everything to the highball glass filled with ice and stir to combine. That’s the quick and easy way.

Whichever way you prefer is great and will result in a delicious cocktail!

Ingredients
  

  • 1 oz raspberry syrup
  • .5 oz lime juice
  • 2 oz gin
  • 2 oz tonic

Instructions
 

  • Add raspberry syrup, lime juice, and gin to a cocktail shaker and fill half-way with ice.
  • Cover and shake vigorously for 30 seconds.
  • Strain into Collins or highball glass filled with fresh ice.
  • Gently pour tonic over top and garnish with lime wheel and fresh raspberries, if desired.
