It’s been one of those days… you know the ones where you have a ton of things to do but you haven’t gotten any of them done? Yep, that’s me today.
I woke up this morning about an hour before I had to get my daughter up for school (Yay for late start Wednesday!). So I decided I’d try and get some work done before the whole house woke up.
I made myself a cup of coffee and then proceeded to head down to the basement and my office. I sat in the chair and noticed that my computer was off.
It was odd because I never turn my computer off at night. I just save my work and shut down the programs that I am using – in case there is a power outage or the computer restarts to update or something – then I don’t have to worry about losing anything.
Whelp, there must’ve been a power outage and, me sleeping, didn’t notice. I pushed the button to boot up the computer and the entire house went dark and my computer never started.
The whole neighborhood and even the elementary school where my daughter goes. The school sent out a text and said that they still had school because they had heat and running water.
Fine by me but after taking her to school and coming back home, I learned that the power wouldn’t be back on until 10am. 10am come around and the power is still not on. Ugh!
Few hours went by and still no power so when it was time for the baby’s nap I decided to take one too. I mean, why not, I literally have nothing to do without my computer so yeah.
The power didn’t end up coming back on until after 3pm and now here I am sitting and writing an almost play-by-play of my super boring, unproductive day. Sorry for that.
And now trying to play catch up on all the emails and work. Not that I’m too worried about it because I do make my own schedule.
However, now I am craving one of these gorgeous smoothies that you have been seeing in the photos. I haven’t eaten very much today since I didn’t have any power or a means to cook anything but now I’ll take this smoothie.
It is perfect and takes the two best flavors of fall and blends them together into this large glass of deliciousness.
Pumpkin Apple Smoothie
- 1/4 cup old fashioned oats
- 1/4 cup pumpkin purée
- 5 oz vanilla Greek yogurt
- 1 medium apple diced (peel on)
- 1/2 cup unsweetened almond milk
- 1 tsp pumpkin pie spice
- 1 cup ice or to taste
- In blender, add all ingredients and blend on high for 30 seconds to 1 minutes or until smooth.
- If smoothie is too thick, add a little more almond milk.
- If smoothie is too thin, add more ice.
