What is Lemon Dijon Roasted Chicken?

Lemon Dijon Roasted Chicken is a simple roasted chicken dinner built around a bold, balanced marinade made with olive oil, lemon zest and juice, Dijon mustard, garlic, and rosemary. It is savory, tangy, and full of fresh flavor without relying on a long ingredient list or complicated prep.

What makes this version especially appealing is that the chicken and potatoes roast together in the same pan. As everything cooks, the potatoes take on the lemony, herby flavor from the marinade while the chicken turns golden and tender. The end result is a meal that feels cozy and practical, but still has enough brightness to keep it from feeling heavy.

If you love recipes that give you crisp chicken skin, tender meat, and a built-in side dish all in one go, this one checks all the boxes. It is the kind of dependable dinner that works for a regular weeknight but still looks nice enough to set in the middle of the table when people come over.

Why You’ll Love this Recipe

  • Big flavor from simple ingredients: Lemon, Dijon mustard, garlic, and rosemary create a punchy marinade that tastes fresh, savory, and a little bit bold.
  • Easy to prepare: The marinade comes together quickly, and most of the work happens in the oven.
  • One-pan friendly: The chicken and potatoes roast together, which makes cleanup easier and gives the potatoes extra flavor.
  • Crispy skin and juicy chicken: Bone-in, skin-on chicken thighs hold onto moisture beautifully while the skin gets nicely browned in the oven.
  • Perfect for everyday dinners: This recipe feels special enough to serve to family or friends, but it is simple enough to make whenever you need dinner to just work.
  • Flexible and approachable: You can make a few easy swaps depending on what you already have in the kitchen.

Ingredients

  • Olive oil: Adds richness to the marinade and helps the chicken roast up beautifully.
  • Lemon zest and lemon juice: Bring brightness and a clean citrus flavor that cuts through the richness of the chicken.
  • Dijon mustard: Adds tang and depth while helping the marinade cling to the chicken and potatoes.
  • Garlic: Gives the whole dish a savory backbone and pairs especially well with the lemon and rosemary.
  • Crushed rosemary: Adds an earthy, fragrant note that makes the finished dish smell as good as it tastes.
  • Red potatoes: Roast until tender and golden while soaking up the flavorful pan juices.
  • Skin-on, bone-in chicken thighs: A great choice for roasting because they stay juicy, develop crisp skin, and bring plenty of flavor to the pan.
  • Salt and pepper: Season the chicken and help all of the other flavors stand out.

Substitutions & Additions

If you need to work with what you have, there is plenty of room to make small changes here without losing the heart of the recipe. Avocado oil or melted butter can be used in place of olive oil, and either option will still give you a rich base for the marinade.

If you do not have lemon, lime can step in for a slightly different citrus note. Dijon mustard gives the recipe its sharp, signature flavor, but whole grain mustard or even yellow mustard can work if that is what you have on hand. Rosemary brings a woodsy, classic roasted flavor, though thyme or oregano are both good options when rosemary is not in the pantry.

You can also round out the pan with a few simple additions if you want to stretch the meal. A side of vegetables served alongside the finished chicken works well, and the original serving ideas pair especially nicely with green beans, roasted asparagus, or a fresh salad.

How to Make this Recipe

Start by preheating your oven to 425°F. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, Dijon mustard, minced garlic, and crushed rosemary until the mixture looks smooth and well combined. Season generously with salt and pepper so the chicken and potatoes both have plenty of flavor.

Next, place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them, making sure each piece gets coated well. If you have the time, let the chicken marinate in the refrigerator for at least 30 minutes. You can leave it longer, up to 4 hours, if you want the lemon, mustard, garlic, and rosemary flavors to sink in even more.

While the chicken is marinating, dice the red potatoes and add them to a large baking dish or sheet pan. Once the chicken is ready, arrange the thighs over the potatoes and pour any remaining marinade over everything in the pan. As the chicken roasts, those juices will drip down and flavor the potatoes underneath, which is one of the best parts of this meal.

Roast the chicken and potatoes for about 35 to 45 minutes, or until the chicken is cooked through and the potatoes are tender and golden. Let the chicken rest for 10 to 15 minutes before serving so the juices can settle back into the meat. When it comes out of the oven, you will have crisp skin on top, juicy chicken underneath, and potatoes that are full of lemony, herby flavor.

Cooking Tips & Tricks

  • Give the marinade a little time: Even 30 minutes helps the lemon, mustard, garlic, and rosemary flavor the chicken more deeply.
  • Use evenly sized potato pieces: This helps them roast at the same rate so you do not end up with some pieces too firm and others too soft.
  • Space the chicken out in the pan: A little room between the thighs helps them roast more evenly and keeps the skin from steaming.
  • Broil briefly for extra crisp skin: If you want more color and crunch, broil the chicken for the last 2 to 3 minutes and watch it closely.
  • Let it rest before serving: A short rest keeps the chicken juicy and makes the whole dish easier to plate.

Serving Suggestions

This chicken is especially good with simple sides that let the lemon and Dijon flavors stay front and center. Steamed green beans or roasted asparagus make an easy vegetable pairing and help round out the meal without adding much extra work.

For something lighter, serve it with a fresh garden salad and a simple vinaigrette. The brightness of the salad works nicely with the savory roasted chicken and potatoes. If you are setting this out for dinner guests, serve everything straight from the baking dish or on a large platter so the golden chicken and roasted potatoes can really do the work for you.

Storage Suggestions

  • Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Warm the chicken and potatoes in a 350°F oven until heated through, or reheat in the microwave for a quicker option.

If you know you will be reheating leftovers later, keeping the chicken and potatoes together helps preserve the flavor from the pan juices. The lemon, mustard, and rosemary continue to come through nicely the next day, which makes this a solid make-once, eat-twice kind of dinner.

Recipe FAQ

Can I use boneless, skinless chicken thighs? Yes, you can, but they may cook faster than bone-in thighs, so start checking them earlier.

Can I use chicken breasts instead? Yes. Chicken breasts will work, though they may not stay quite as juicy as chicken thighs, so watch the cooking time closely.

Can I make this ahead of time? Yes. You can marinate the chicken and prep the potatoes ahead of time, then store them in the refrigerator until you are ready to roast.

Do I have to marinate the chicken for hours? No. At least 30 minutes is recommended, but even a shorter rest will still give you good flavor.

How do I know when the potatoes are done? They should be fork-tender and lightly golden around the edges by the time the chicken is finished roasting.
