The kiddos finally started back to school today and I am a happy momma. It’s been a long hard year and a half for us (and the rest of the world) but I’m glad we’re finally getting back into some normalcy.
The kids really struggled being out of school for so long and I’m hoping that they’ll catch up quickly.
In celebration of getting back to school, I’m sharing this guava watermelon rum-quila that has been a go-to for the last few weeks of summer.

It also helps that the kids devour watermelon in the summer, so there’s always fresh watermelon to make juice from.
To make watermelon juice, just add some watermelon cubes to a blender and blend until smooth. Strain through a fine mesh sieve to get out all the seeds and pulp.
I buy the guava nectar pre-made in the Hispanic sections of the grocery store. They have the blue cans of guava, mango, and a few others that I usually keep on hand for cocktails during the summertime.

Add your fresh watermelon juice, tequila, rum, guava nectar, lime juice, and simple syrup to a cocktail shaker. Fill the shaker half-way with ice then cover and shake vigorously for 30 seconds to chill and incorporate.
Strain into a glass filled with fresh ice and garnish with mint and watermelon slices.
Sip and enjoy on the porch in the backyard or out by the pool. Cheers to the last few days of summer!
