It’s April and it’s still cold outside. WTF mother nature?!? We just had spring break for school and had to go to Florida to get warm weather!
As much as I love the summers here in Michigan, because they are the equivalent of winter in Florida… haha, the winter’s just get to me. I feel like they just drag on and on and on.
And it probably doesn’t help that we live in the southwest, near Lake Michigan, and get all of that “lake effect” snow every year.
I mean.. Chicago doesn’t even get as much snow as us!
We were driving back from the airport in Chicago and there was barely any snow on the ground. Like maybe a flurry.
Then we cross the border into Michigan and there’s at least 6 inches!
So I thought it appropriate to bake up some warm crumb cake when we came back from spring break. Just to have and enjoy on these still cold mornings.
This cake turned out to be a perfect little afternoon treat as well as a perfect little breakfast to go with a hot cup of coffee or tea (whichever you enjoy drinking in the morning).
I’m a sucker for crumb topping, even though it is messy.
Cinnamon Streusel Crumb Cake
Ingredients
- 1/3 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter melted
- 1 cup all-purpose flour
- 5 Tbsp unsalted butter softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup milk
- 1 cup all-purpose flour
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350° F then spray 8 x 8 baking dish with non-stick cooking spray.
- In a medium bowl, mix together brown sugar, sugar, and cinnamon until incorporated. Pour in melted butter and stir to combine.
- Add flour and mix until no streaks of flour are left, then set aside.
- In the bowl of a stand mixer, or using electric beaters, cream together butter and sugar until fluffy. Mix in egg and vanilla then slowly add milk and mix until incorporated.
- Add flour, baking powder, baking soda, and salt and mix until fully combined scraping down sides as needed.
- Pour batter into prepared baking dish spreading into even layer. Crumble topping and even distribute on top of batter.
- Bake at 350° F for about 30-35 minutes or until toothpick inserted in center comes out clean.
- Cool completely before cutting and enjoying!
