Ya’ll I have been super into hot sauce and spicy things lately. Which is kind of out of character for me. While I do love a hot sauce or spicy jalapeno moment, it’s usually few and far between.

However, lately, I’ve been craving all the spicy things and covering almost all my food with Cholula or any of the other 91748 hot sauces my husband keeps in the fridge.

A few weeks ago I made these delicious buffalo chicken sandwich sliders that came out amazing! I even topped mine with extra hot sauce for good measure.

For this particular recipe I used a pre-made rotisserie chicken to make it quick and easy but I’ve also cooked and shredded my own chicken and it turns out just the same.

Now, there is also pre-pulled and shredded chicken you can get from Costco that I love and usually keep in the freezer for quick meals like this.

So honestly, it’s your preference on how easy you want to make it.

Start with grabbing your rotisserie chicken from the grocery store and pulling all the meat off the bone and shredding into a large bowl.

Add the buffalo sauce and melted butter in a small bowl. Then pour the buffalo mixture over top of the shredded chicken and toss to coat all the chicken.

Preheat your broiler or heat to 500° F, whichever is the highest setting and slice the dinner rolls down the middle to make tops and bottoms. Place them, cut side up, on a large baking sheet and broil for 2-3 minutes until golden brown.

Make sure to watch them carefully because they will go from browned to black in a matter of seconds so don’t take your eyes off of them!

Remove from oven and lower the temp to 400° F.

Divide the chicken mixture evenly over the toasted bottom buns then evenly distribute the cheese and celery over top.

Cover with the top of the buns and brush with melted butter.

Place back into the oven for 10 minutes or until the cheese is melted and the top buns are toasty.

Remove from oven, pull apart, and enjoy!

Ingredients
  

  • 1 12-pack pull-apart dinner rolls
  • 2 Tbsp unsalted butter melted
  • 4 Tbsp Franks Red Hot Sauce
  • 2 cups shredded rotisserie chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup blue cheese crumbles
  • 1/4 cup celery sliced – about 1 stalk

Instructions
 

  • Preheat the broiler to 500° F or the highest setting.
  • Slice the dinner rolls in half horizontally, placing the top and bottom half, cut side up, on the sheet pan. Place in the broiler and toast until golden-brown, about 1-2 minutes.
  • Remove from heat and lower oven temp to 400° F.
  • In a large bowl, add the buffalo sauce and melted butter and stir to combine. Add the shredded chicken and stir to coat all the chicken.
  • Divide the chicken mixture evenly among the toasted bread bottoms. Then evenly distribute both cheeses and celery.
  • Cover with the bun tops and place in the oven at 400° F and bake until bread is toasty and cheese is melted, about 10-15 minutes.
  • Remove from oven and serve immediately. Either pull-apart or cut with a knife.
