Cocktail Thursday!
Didn’t I post my last cocktail on Thursday? IDK but let’s go with it.
Today I’m bringing you another delicious one – Blackberry Lime Rum Punch. Made with fresh blackberry syrup, lime juice, Chambord, rum, and some club soda for topping.
Let’s get shaking!
Start by making your blackberry syrup in a small saucepan. Heat over medium heat and add equal parts (1 cup) sugar and water and 1 cup of blackberries. Mash the blackberries, releasing the juice, while cooking.
Bring to slow simmer and reduce heat and let simmer for about 10 minutes to dissolve the sugar and cook the blackberries down a little.
Remove from heat and let cool for about 5 minutes. Strain through fine mesh strainer into an airtight bottle or container. Let the mixture cool completely before using in cocktail.
You can make the syrup ahead or you can put it in the freezer after making so it cools quicker.
To make the blackberry lime rum punch, add the blackberry syrup, lime juice, Chambord, and rum into a cocktail shaker. Fill half-way with ice then cover and shake vigorously for 30 seconds.
Strain into cocktail glass filled with fresh ice and top off with about 1-2 oz of club soda. Garnish with extra fresh berries and a lime wedge, if preferred. Serve and enjoy.
If you want a little extra, dip the rim of the glass in a shallow dish with a little water then dip in sugar and twist to rim glass with fine sugar. You could also do salt if you want instead. I did sugar for these but salt would be equally as delicious.

Blackberry Lime Rum Punch
Ingredients
- 4 oz blackberry syrup
- 4 oz lime juice
- 4 oz chambord
- 8 oz white rum
- 8 oz club soda
Instructions
- Add all ingredients except club soda into a cocktail shaker. Fill 1/2 way with ice.
- Cover and shake vigorously for 30 seconds to combine and chill drink.
- Strain into glass filled with fresh ice and top with 2 oz club soda. Garnish with lime wedge and extra blackberries, if desired.
