Summers are the perfect time for experimentation with fruit smoothies.
There are so many different kinds of fresh fruit available that you can make just about anything your heart desires.
My whole family loves fresh fruit smoothies and recently the baby has been wanting some, too!
When I made this smoothie she was at my feet watching, like usual, and after I had poured it into a glass she would not stop pulling on my pants to see and get some of what I was making.
Of course I couldn’t say no to her so I put some in her own little sippy cup and gave it to her. She took one sip and the face she made was priceless. Haha.
It was her first time having a frozen fruit smoothie and I think she got a brain freeze on the first sip!
That didn’t stop her from guzzling, or more like sipping slowly, the rest of the smoothie down while toddling all over the house… toy in one hand and sippy cup smoothie in the other.
I eventually found the empty sippy cup in the corner somewhere… guess she thoroughly enjoyed it!
My older daughter, on the other hand, sticks her nose up at anything remotely healthy or containing the words “fresh” or “smoothie.”
I’m not sure why now, she used to love them before.
I’ll just chalk it up to her getting older and getting an attitude and beginning to revert to her picky eating habits. She’ll learn to love them again.
Anyway, this blackberry coconut protein smoothie is packed with coconut flavor and the perfect morning pick me up or afternoon snack.
With coconut milk, flaked coconut, and fresh blackberries it’s something your whole family will enjoy… or at least 3/4 of you family… as in my case.
Blackberry Coconut Protein Shake
Ingredients
- 1 scoop strawberry protein powder
- 1/2 cup blackberries fresh or frozen
- 1/2 banana
- 10 oz unsweetened coconut milk
- 1/4 cup coconut flakes
- 1/2 cup ice
Instructions
- Place all ingredients except for flaked coconut into blender and blend on high until smooth.
- Add flaked coconut and blend for another 15-30 seconds.
- Pour into glass and serve immediately.
Notes
Optional sweetener may also be added.
